2013 Project365 (Day 128)

Dinner sandwichA couple of days ago my brand new induction hob refused to switch on. Hopefully it will be able to be fixed but right now I am without a hob which is very annoying, especially as I invited my cousin and her husband for dinner on Friday.

So, this afternoon I went to my Mum and Dad’s house to cook a couple of curries which I can just re-heat.

By the time I got home though I was tired so out tea consisted of fish-fingers, oven chips and peas accompanied by a glass of red wine. The Mister decided a chip and fish-finger sandwich was the way forward!

2013 Project365 (Day 76)

Food glorious food!Today’s picture is of my shopping list and my purse. The one thing that I have noticed since moving to Guernsey and then moving into our own house is just how expensive food is over here.

We don’t have Morrisons, Tescos or Asda and the only supermarkets we have are Waitrose, the Co-Op and Marks and Spencers food and as a result we can spend a small fortune on food.

So, from tomorrow I will menu plan and pay in cash for food in order to keep track of how much I am spending.

So, two questions…

What do you think is a reasonable shopping budget for two adults for the week?

What are your favourite meals? (cheap and healthy please!)

2013 Project365 (Day 63)

4 March 2013I cook quite a lot of Slimming World recipes as they are often very tasty and low fat. Their magazines are particularly good and they regularly have great features on food like curries and other spicy food which we love.

The Mister has missed this sort of food a lot whilst we have been living with my parents as my Dad doesn’t like ‘foreign food’ (he’s perfectly happy to eat pasta though!)

Tonight I cooked Sichuan Chicken (the recipe was for pork but I had chicken in the freezer) and it was absolutely delicious! It is rare for me to cook something that looks so much like the recipe in the book though!

2013 Project365 (Day 57)

Birthday fairy cakesTomorrow our gorgeous niece will be 2 years old. I can’t believe that time is flying by so fast.

My sister seems to have gone from planning a quiet party with cake to a full-blown shin-dig, so I thought I would help out by making some fairy cakes.

These are vanilla cupcakes with buttercream icing (which was meant to be piped on beautifully but I didn’t have a nozzle big enough so we have gone for the ‘rustic’ look!) topped with jelly beans or Jelly Tots. They are delicious!

2012 Project365 (Day 347)

13 December 2012My Auntie Jen is a brilliant jam and chutney maker. In the lead up to Christmas I reckon she has made gallons of the stuff and has packaged and parcelled it all up in gorgeous jars and hampers which she sells. Her preserves also absolutely delicious!

I needed to get a gift for someone so paid a visit to her house to check out her jam bookcase. It’s starting to look sadly depleted now so after Christmas I think she needs to get preserving.

2012 Project365 (Day 329)

Mini CakesI was considering going to work today to try and deal with some paperwork but I was banned from going because I was so knackered and a pathetic mess yesterday.

Fortunately I was saved by the fact that when I got home from church there was a big delivery from Lakeland. I love this shop, I mean it sells so many things that I never knew I needed! I was quite restrained and had mainly bought stuff that I did actually need, like one of their oven liners to try and keep my new oven clean.

The most exciting thing in the box though was the Mini Sandwich Tin which has loose bottoms in each section so it makes it dead easy to get all the cakes out! It’s brilliant and I made some Mini Victoria Sponge Cakes and some Mini Lemon Curd Sponge Cakes. They look divine and I have made them to take to work tomorrow for my final team meeting before I go off on maternity leave. Yum yum!

2012 Project365 (Day 307)

Sausages!The Mister is on a set of three night shifts so I decided to cook him one of his favourite dinners… sausages, mash, onions and baked beans. He is a man of simple taste – which of course is why he picked me!

I went to my local butchers to pick up some of their delicious Cobo sausages. The butcher persuaded me to buy a few of their Marmite and Cheese sausages to try. They were quite nice, very tasty but they had a bit of an aftertaste. I think I will stick to my old favourites!

2012 Project365 (Day 228)

CupcakeThis evening The Mister and Stef and I went to Night Market in aid of Teenage Cancer Trust.

There were various stalls selling food and vintage and second-hand clothing and cakes etc.

It was a real shame as it had starting raining so the turn out wasn’t great, although hopefully a few more people will turn up over the course of the evening.

The only thing that I bought was some delicious muffins and vanilla cupcakes. Yum!

Ps) We are off on holiday tomorrow so you might have to wait for my updates!

2012 Project365 (Day 226)

14 August 2012I know this was a boring photo but it was such a delicious chicken curry that I made for tea tonight! Mum and Dad were out for dinner and as Dad is such a philistine about food the only time we get to eat ‘foreign muck’ is when he isn’t here (although he is happy to eat pasta!)

It was yum, although it could do with something green on the plate! Next time I make it I need to tweak it a bit to make it Slimming World friendly and just use spray oil to cook the onions rather than butter!
